MUSHROOM PROJECT

There are many delicious edible varieties of mushrooms.  They are a good source of the B vitamins, pantothenic acid, riboflavin, and niacin.  Mushrooms also contain selenium, ergothioneine, copper, potassium, and beta-glucans.  These umami-rich “vegetables” are also there only source of vitamin D in the product aisle.  If kept moist, mushrooms should grow well in the shady areas of North Little Rock.  Cereus solution is acquiring 4-foot white oak logs to inoculate with mushrooms, including shiitake, oyster, and reishi.  Each log should produce a pound of mushrooms per year for up to five years.
